I am in NJ an ended up going to Sportsmobile In Texas. Overall I am happy with it; I also had them put a loft bed in as well. If I had to do it all over again I would do exactly what Vtwinkicker did or do it myself.

I believe Sportsmobile also offers a removable captain seat as an option. I don't know if they will sell the parts for DIY though.
Nice bike! I just got a Kona Big Honzo-best bike I ever owned, though I really need to dial it back a bit I am not as young as I use to be:). I am in NJ for a few more years but check out the bike packing section on Expedition Portal also maybe local clubs or bike shops may have group rides...
I do fish all the time in parchment on top of thinly sliced onions, peppers, diced tomatoes, seasoning, lemons and cilantro all sealed up in folded pouch. I must of saw it on TV because I wouldn't of thought of it on my own.

At home, I ferment in Ball Jars wrapped in a blanket in a cooler. Then the fridge when done. If done in smaller batches, should work as long as there wasn't to big of temp. swings.
I am not sure about other states, but NJ offers a bigger discount on hybrid vehicles. I had to bring my documents to the Newark office to get my green transponder.
