It's very easy! I'm soon to be 68 and 6 years ago I lived in a camper van for 2 and 1/2 years I did get solar because of a friend installed it for me but I did very well without it. I did not require a refrigerator, I am the queen of drive-throughs! I also had a little dog, but I was with her and she with me all the time. Don't break up with your girlfriend and have fun! I found it so liberating and I want to go back to that lifestyle now! Never should have sold my Tank!
Get the minimal 200watt solar kit from Bluetti and get out of the vicinity of any metro area asap. That way your van can be totally stealth using the foldable Bluetti solar panels. Any real food supply chain problem for even a few weeks, and the metro golems will turn cannibal. Go total ultraminimal so that your vehicle can bear the weight of sufficient water as well as food. I have 6 months food and 2 months of water in the minivan at all times. Prepare for the worst now, while you still can.
It really *is* exciting and scary at the same time. But you can do it - and a few months in you'll be wondering what you were so worried about.
The biggest (pretty much only) disadvantage of the EcoFlow power stations was battery chemistry. They addressed this issue in their top of the line Delta Pro, but at $3400 it is beyond most folks budget. Today, EcoFlow announced the release of the Delta 2, bringing LiFePO4 to their $1000 power station.I purchased the Ecoflow delta mini today. Excited

If there is a microwave in the break-room there you could have food before work or afterwards. Lunch, while on your break.
If you have a small cooler in your rig and a small tote-able cooler you could carry like a lunch box then you could possibly tote some of those blue plastic freezer blocks to work and store them in a freezer while you're working. (in the back of the store) Transport them back and forth to your rig's larger cooler so you could have refrigeration at the rig.
You could buy bottled water and drink some from each bottle and freeze them at work until you find some freeze blocks. Get a plastic container to make Solar Tea while at work so you can have iced Tea when you get home.
End of summer these things will be on sale reduced.
If there is a Hospital near by sometimes they have reasonable priced meals. (not all of them though).

That blender is so cool. Boy is that website expensive, though. Except for the food. Their Mountain House products cost less than at Walmart and Amazon.

Even when it comes to shopping. I found a pull string operated blender at Walmart back when they were $5 bucks. If you packed one of these along to work you could process some food items to prep when you got back to your rig. Then you could clean it up at work for the return home. The processed food stuff could be placed in those Deli-containers. This way it all works on your own horse power.
