How do you get moisture in during the bake? Do you use a high hydration recipe?
I'm at Imperial Dam but would you consider giving a demo to a chef?
74-78% hydration if I want it to keep its shape and not spread out in the Dutch oven. Higher hydration up to 100% if I want a sourdough-porn open crumb, or if I'm pushing the envelope on whole grain flour content. I love to teach my method. If you want to come here and wear a mask and not stand too close, I would love to show you how I do it.
My method has been simplified and simplified to make it as easy and non-fussy as possible. I don't autolyse, I don't have bannetons or a lamé. I do my stretch and folds in the bowl. I don't even feed my starter, Hugo, twice a day lol. It's an easy and non-rigid process that lends itself well to boondocking

I imagine with all the YouTubers around someone would love to post a video for you! Lol!!!

Ravella, I would be happy to help you with getting some photos of your process online so people can see them. Just let me know when you are gooing to do a baking session. Of course then I will be standing right there to sample the finished loaf so I do have an ulterior motive in offering to help with posting photos.

Thank you, Maki. I don't think photos would be nearly as satisfactory as a person to person in person sesh. I don't know how to explain this but i'll try... Sourdough bread is not a recipe with steps. It's decisions based on lots of things that may change bake to bake, season to season, and for nomads, climate to climate. There are tons and tons of blogs and videos about how to make sourdough. When I first started, I quickly got discouraged and almost quit because there was so much contradictory info, most of it presented as "the" way. I did not know which way to turn. In person, you can ask questions, do your own hands-on guided bake, and gain confidence right off the bat.
That said, you are very welcome to have some bread. I am baking tomorrow and both boules are promised. Next bake after that, a boule for you :)

Ravella, yes please I would love a boule

Hope their isn’t a butter shortage! Lol!! Some of my finest childhood memories are going to the bakery and getting a hot loaf of fresh baked bread right out of the oven to eat with a coating of melting butter.

Looks like I need to get you some more flour and charcoal.

Don't you do it, Cammalu! I have plenty! And if I need anything after your gift of flours, it is not coming from you! :p

But I want bread and am more than willing to pay for it. Why not sell some loaves? Sounds like you could have a little underground business going out there.

When you start selling stuff it becomes work :( Which is a 4 letter word that comes with deadlines and obligations and having to deal with customers.  sharing some gifts now and again at your own convenience when in the mood to bake ... is a three letter word... fun

^^^ You can easily turn a fun hobby into work. I always liked the picture of the homeless guy in the whole earth catalog with the caption “Stay hungry, stay free!” Less is more especially when some crazy person will take you for a ride in their 4x4! If it breaks you are just walking which is what you were doing in the first place! Lol!!!

What about Security while on BLM land?

I normally carry at least one firearm with me anywhere I go, are there any rules about this?

Probably depends on a lot of things like what state you are in and where on BLM you are and what you want to do with the gun. Most problems on BLM involve avoiding problems in the first place or moving before problems occur, no gun necessary and they seldom if ever happen. Probably the most often reported incident involves accidentally discharging a firearm.
