I'm not out on the road yet but I thought I would offer this suggestion: Almond milk seems to last forever for me. I have left an opened carton out overnight and it was still good. And these are the half-gallon cartons that are in the refrigerated section and say you must keep them refrigerated. I eat a bowl of cereal every night, using almond milk. I often leave the bowl on my desk when I am done and don't wash it out till the morning. The milk is never smelly. It just dries up rather than curdling or getting rotten. Kept in the fridge it lasts forever. The only way I have found to ruin it is to freeze it. Then it just tastes funny.

I thought this info might come in handy for people who have to worry about the consistency of their food cooling options.

Now, I get the plain, unsweetened version. YMMV on those with lots of sugar in them. I switched to almond milk to cut down my sugar consumption.
 
I have never tasted Almond Milk...what does it taste like? I keep 1/2 and 1/2 in my Cooler for coffee and cooking. Forgive me but what is YMMV? 1/2 and 1/2 will keep longer than regular milk. I bought this carton on 9/12 and the expiration date on the carton is 10/21.
 
The cartons always say 'use within 7-10 days after opening'. Not sure why they all say that, but they do. I've gone longer without any problems...

I have never tasted almond milk either.  What does it taste like, the whole milk I am used to or almonds or??

I'm also a proponent of almond milk for the same reason. I bought it over regular milk when I was still an apartment dweller because regular milk spoiled too quickly for me. Almond milk, I would leave a carton in the fridge for weeks and it never seemed to go bad.

Except one time, and only one time. Within a comparatively short time (1 or 2 weeks?) I found the carton turned all black mold and disgusting inside. This only happened once, and there was no gray area with any of the cartons that sat longer - they all stayed fine and this one turned rotten. I take that one as a fluke and kind of assume that it gathered some spores which it cultured like a petri dish.

I also find I prefer the taste. It's closer to the consistency of skim milk, but skim milk just tastes closer to water than milk; almond milk is lighter but tastes closer to milk than water.

Also, it's worth pointing out that soy milk contains estrogen, and almond milk does not.
 
I love the Dark Chocolate variety!!

I've even heated it up to make hot chocolate on a cold winter night here.

And yes, I've kept it in the fridge for up to 3 weeks without spoilage but that's unusual because if it's in the house, I'm having a big, tall glass of it.

I'm lactose sensitive so it's either that or nothing when it comes to chocolate milk.

To me it tastes what I remember whole chocolate milk tasted like, no watered down 2% density nor taste!!

One of these days I'll try the plain unsweetened or the coconut flavors too!!

The other nice thing is that you can find it in the tetra packs sometimes so it doesn't need refrigeration until it's opened. A big bonus if you're going boondocking for longer than the cooler is big!
 
I don't think it tastes like almonds all that much. I love the stuff, so much better than dairy milk
 
I'm gonna hafta give this a try, as I've been drinking soy milk for the last few months, altho I usually only have it on my morning cereal.

Now CHOCOLATE MILK on the other hand.......................................!!! :D

Well, it's not exactly estrogen, but it is close enough to give men breasts. Men SHOULD NOT drink soy milk or eat any other soy products. Google it.

So it is like 2% milk.  Some milk taste.

I prefer the double pasteurized milk, last several weeks at home.  On the road I drink more milk so we get the gallon of whole milk.  Never lasts long enough to go bad, but I have a 3 way refer to keep it in.

I'm a picky eater, who does not like anything that tastes too different. I had no trouble switching from cow milk to almond milk. The plain stuff just tastes kinda milk-ish / almond-ish. They also have vanilla flavored that tastes like melted vanilla ice-cream. That is too much for me.

And yes, like soy milk, it is also available in shelf-storable containers that require no refrigeration till opened. But these are about twice the cost. I get a half gallon of the refrigerated kind for $2.57 at the HEB here in Austin.

Agreed. For someone who is all about drinking whole milk, almond milk may be a hard sell, but most either drink 2% or use milk on cereal etc and they should have no problem giving almond milk a try. I use almond milk for cooking too and have had no issues replacing dairy milk. It makes nice pancakes.
 
I've been drinking almond milk for years , plain , vanilla and dark chocolate. One for every occasion !
 
I like rice milk. I buy the Rice Dreams brand, tastes like skim milk with a drop of vanilla. Lasts forever in the fridge and is great on cereal. Regular milk seems to disagree with me in my old age :)

When I was younger we had Holstein cows "cattle" and they were milked ,milched twice a day.....with good production in gallons.

How many almonds do they need to milch to get a gallon ?
 
Im gonna pop in and say that Coconut milk might be an easier sell to a whole milk drinker wanting to convert. Its a little thicker and creamier than the almond...but either way I love them both.

Well, I think this is all very interesting. I would not like the taste of Almonds in a good cup of morning coffee. Also using it for cooking might change the flavor of the dish. 1/2 and 1/2 lasts for a long time in my cooler and in three years has never gone bad on me. Personally, I don't see the point of substitute milk unless a person is lactose intolerant or something like that. Although I might try the Chocolate...Hahahaha! I will stick with Dairy!
 
Making your own almond milk is very easy, if you have a high speed blender. All you have to do is soak the almonds overnight then blend. It Tastes much better than store bought!

Because dairy can cause stuff like allergies... can have the whole antis/hormone thing going on... That being said I have to have 1/2 and 1/2 in my coffee, but try to cut out dairy in other areas...

Yeah, but the cost would be 10 times more... plus not so sure it would taste better... original flavor, non-sweetened is where it's at... :)
