I think Almond/Chocolate would taste good...sort of like Rockey Road Ice Cream without the Marshmallows. I rely on Dairy for my protein intake, and Dairy doesn't give me any problems. All this is good information!
 
I'm able to buy lactose free milk in any variety I want here - right up to 35% whipping cream. The lactose free chocolate only comes in 2% however and it tastes more like water than anything else so I use the Almond milk for chocolate.

I use 10% for everything now. If I need whole milk for a recipe I can always dilute it a bit but find I like most of my milk dishes a little rich anyways.

I did have trouble getting lactose free milk when I was in BC last year and in Florida the winter before. Hopefully the lactose free availability will be easy in AZ, if not then I have to find goats milk. I can't drink my tea without my milk... :rolleyes:

BTW, 5% will last longer than whole milk before souring, 10% will last even longer so if all you're doing is using it in coffee/tea and are having trouble using it up before it sours, move up to a higher fat content.
 
If this helps anyone, Peak brand milk powder (I found it on Amazon) is actually pretty good. It's full-fat (unlike the powdered nonfat varieties usually at the grocery store which are...yuck). It works pretty well for those things you just want regular...'milk' for. I'm kind of fussy and I was pleasantly surprised by it. I had no fridge in my tiny camper at first, so I used Peak in my coffee and on cereal, where I get the full effect of the flavor - and it was good! It's not particularly cheap, but if you use it wisely a can will last awhile for those "I gotta have MILK" moments. Just mix it with water. I was carrying water anyways so it was also lightweight and easy to deal with.

I didn't think about using almond or coconut milk or I'd maybe have had some of those smaller room-temperature shelf-type containers with me too and switched between them all depending on what I was wanting to make.

Yep, call me a convert. This almond milk goes down just fine! (I'm cutting my chocolate by 1/3 with regular white almond milk.)

well I really don't drink milk. every once in a great while I will have a bowl of cereal. but I mostly eat cereal dry. I use canned milk for cooking and for my coffee if I have a partial can opened I will use it. so I really don't find the need for any of the milk substitutes.

however every once in a while I do enjoy an ice cold chocolate milk, but I just get the regular old cows milk. it's funny but if I am working outside on a hot day, at the end of the day if I am real thirsty I enjoy a chocolate milk and a apple juice. don't ask me why, I couldn't give you an answer. highdesertranger
 
My 2 cents:

To make an entire gallon only takes 2 or less cups of almonds (Not 2 lbs. as someone previously joked)

I usually make 2 quarts at a time, w/3/4 cup raw/orgainic almonds (yes, they come from out of country via Amazon :).. and ?? 1/4 tsp of Stevia. Love it. It does not have the same longevity as 'store bought'.. which of course, leads me to realize... they're putting in Something to preserve it longer. (eww) Mine usually last about 4 days or so.

Just have to remember to soak almonds over night (actually 4 hrs is adequate if you're in a hurry) and DRAIN off the water, rinse a bit, then pop into the blender. (Still lovin' my 1993 Vita Mix:) Great investment! Also need to get a 'nut milk bag' to strain. :)

I've never made my own almond milk and figure it's easy enough to buy that it's one thing I won't make myself....I've always got more things to make than time!!
 
HI.. Been gone a long time... But in looking at my old posts... I see the recipe now and it makes sense. But they only made a 1/2 gallon - this might explain the spoilage issue. :)
Hope you weren't mad at me! I really did think you were kidding.

I got back in here cause I was trying to figure out how to take my Vita Mix along in my Minivan!!! lol (No.. I'm not joking; sadly.. ;)
 
Do you think the Almond milk would keep for a period of time (lets say one week) without any refrigeration?

I wouldn't trust it THAT long without refrigeration, particularly in hotter weather.

I have found it in small single serve tetra packs as well as by the quart in the tetras in the juice or milk aisle (depending on the store).

The only thing I haven't found is my favorite flavor---that Dark Chocolate Almond Milk - it's only in the dairy aisle by the 1/2 gallon...sigh!!
 
I like them all!

Rice, Almond, Coconut.....Plain and Vanilla.  
Wally World carries 1/2 gallon cartons of AlmondCoconut!  Yea, Almond Coconut combo!

I use it in my coffee.  Need to water it down for cereal.  I bit too thick otherwise.

Freezing Almond (Almond Coconut) milk doesn't work well.  When it defrosts, it's separates and the color turns from a creamy color to more of a beige.  Looks gross but taste is fine.

I don't drink store bought cows milk.  Tastes sour to me.  Lactose intolerant.  Perhaps in a pinch I would if they were grass fed and treated humanely.
 
I cant handle anything but soy milk. The others taste like watery ick to me and coconut milk seems kinda grainy? Maybe it depends on the brand but that was my experience with it

I've also tried the coconut coffee creamer. Nope no bueno.
