The New York Times featured a recipe today- Cannellini-Bean Pasta With Beurre Blanc. 
It sounded interesting. The comments pointed to her website.

Looks like there could be some interesting inexpensive recipes. 
Might be too many steps and items for regular van cooking but never hurts to look. Sometimes an additional spice or different way of doing can make for new interest in a dish
 
One of the things I've been working with is making a basic sauce (spaghetti) which could be dinner the first night it is made, and double over with some additions to be a Sloppy Joe sauce for lunch sandwiches the next day....and hot dog sauce the day after.  I'm sure that there are a number of other sauces or foods that can be rolled over the same way.  But the thinking is to cook once and eat for three or four days with only warming over. 
Granted in this example this only covers a few of many steps that would be required. 

It's a method of thinking used by crew cooks where they have a plan for 15 days that allows them to work smarter, eliminate redundant labor, and be more economical with the food in stock.   Once cooking this way a big job can be made to look 
effortless.
