My Fried Rice Recipe.
(I cook the rice first in saucepans and let it cool)
3 Flavors Fried Rice
1 Cup thin sliced grilled Chicken Breast basted with Teriyaki sauce
1 Cup thin sliced lean boneless pork chop or pork steak (pre cooked if you like)
1/2 Cup frozen Tiny Shrimp (or minced-up peeled larger shrimp to equal 1/2 Cup)
1/2 Cup uncooked white and brown rice. (cook white rice in 1 1/2 Cup water with 1/2 a Chicken
bouillon cube for 15 minutes, remove from heat and allow to cool. Cook Brown rice similarly, but
for 45 minutes. You'll have 3 Cups of cold "cooked rice".
Thin slice 3 green onions
Mince 1 yellow onion medium to large in size
1 Cup frozen green peas or peas with carrots
2 large eggs lightly whisked and fried in a small skillet. Remove and cut up allowing to cool
2 TB of Peanut Oil for cooking
Sesame oil (to taste but add toward the end of stir frying)
2 TB of Soy Sauce (or to taste)
Five Spice seasoning to taste
Cooking
Have your Wok (or Skillet) heated to medium to high heat
Add 1 TB of the Peanut oil and swirl around the sides and bottom of the Wok and add minced onions
and the peas or peas & carrots. Stir frying until they are tender and glowing bright in color.
Scoot the onion, peas, carrots to one side and add the egg to re-heat it for a moment.
Add the second ounce of peanut oil.
Next, add the chicken, pork, & shrimp, and stir and toss to heat it until cooked.
Now add the rice and toss and stir to mix with the other ingredients.
Continue stir frying until the oil is absorbed and the mixture is getting hot. Add Soy Sauce
sprinkling it over the rice mixture and mixing in well. You can add a few shakes of 5 Spice seasoning now
but go easy with it as it is a potent blend of flavors.
Toss this mixture together and then add the sliced green onions and stir into the mixture Then add a drizzle
of Sesame Oil over the hot rice mixture and remove from heat. Allow to cool for a moment before plating.
Additions: You may add some thinly sliced Napa (Chinese Cabbage) into this fried rice if you like. A hand
full would be plenty. Snow Peas can be added as a Garnish towards the end.
There is no thickener or gravy made in this recipe.
With this style of cooking, if you are new to it, there is a bit of prep for the ingredients. But when they are ready to go into the Wok the process moves quickly once the stir frying begins.
