First place we went after picking up the van in Apache Junction (just love that name) AZ, was to drive it all the way back to the Puget Sound area in WA. Stopping at the North Rim of the Grand Canyon and Baker City, OR (cool Oregon Trail Museum there) and Pendleton to get a great deal on a super blanket. We weren't sleeping in the van because it wasn't fitted out yet and by the time we'd driven and driven all day, we wanted a shower and motel.
After putting in a temporary bed platform and rudimentary galley, we went to nearby Lake Crescent on Olympic Peninsula. I'm going to make some adjustments and re-engineer things, and then we'll start making things more permanent. We don't plan to live in our van, just camp and roadtrip, but for one person, I have to say that a Chevy Express has oodles of room (compared to our 89 Toyota van) and I think if a single person needs more stuff than it can carry, you've got too much stuff. Especially if you are under 5'7", because then you could sleep crossways in the back, leaving plenty of room in the main area of the van.
