What are your favorite healthy meals?

<p style="margin: 0px;">Hi friends -</p><p style="margin: 0px;">&nbsp;</p><p style="margin: 0px;">I was just curious what kinds of healthy stuff you like to cook up...&nbsp; So far it's been possible to eat&nbsp;low fat and&nbsp;nutritious food while camping.&nbsp; I was wondering what kinds of cuisine everyone enjoys...</p><p style="margin: 0px;">&nbsp;</p><p style="margin: 0px;">Some of the stuff I make on a regular basis are toaster oven pizzas, hobo stew, stir fried anything&nbsp;(over the butane stove), baked cornbread with chili, etc.</p><p style="margin: 0px;">&nbsp;</p><p style="margin: 0px;">There are more ideas such as fried plaintains that sound fun and tasty.</p><p style="margin: 0px;">&nbsp;</p><p style="margin: 0px;">I just discovered the super high fiber, low calorie tomato basil wraps.&nbsp; Good stuff.</p><p style="margin: 0px;"><br>What healthy foods do you like to make?</p>
 
Hummus and pita with a simple salad of lettuce, sliced tomatoes, and lemon juice/oil dressing makes for a simple but healthy meal.<div><br></div>
 
<span style="color: rgb(102, 0, 0);">Fritattas - eggs, greens, veggies and cheese. &nbsp;If you have left over meat, toss it in. &nbsp;Free range eggs and grass fed beef made into sausage...yummmmmy. I use spinach, beet greens, kale, broccoli, peppers - you name it.</span><div><span style="color: rgb(102, 0, 0);"><br></span></div><div><span style="color: rgb(102, 0, 0);">~SE</span></div>

Sushi rolls with fruit and vegetable filling. Haven't been courageous enough to work with raw fish. Takes a very clean kitchen for safety. Cooked shrimp and crab, I've used. Rice is easy to make, and so is miso soup and a salad with ginger dressing. Most ingredients don't require refrigeration, except the seafood.

The Diet Coke makes ALL the difference.....

*sigh* have recently made the decision to give up diet Coke and to cut back,on coffee , drinking decaf green tea instead. Or water. My Blood pressure was getting iffy, so...
 
<P>Potatos fried in peanut oil with sweet onions, orange, yellow and red bell peppers. Topped with eggs over easy.</P>
 
Baked bean and whole wheat bread, with a side of fruit, or a fruit drink.<div><br></div><div>Good solid all around meal.</div>
 
Pretty tasting sounding stuff... <br><br>I'll pass on the high cal McDonald's stuff though.&nbsp; I eat at McDonald's frequently (almost once a day) but just get a salad w/ honey mustard (350 cal total) or a grilled chicken snack wrap...&nbsp; A big ole' greasy cheeseburger or three would be so good right now though!&nbsp; <br><br>Our Iowa-based HyVee grocery store chain has been running some cool pre-made salads (usually $4.99) for buy one, get one.&nbsp; They really hit the spot.&nbsp; The special is on till the end of March.&nbsp; I love to cook but any more have been opting for salads to keep the blood sugar in check and to keep losing weight.<br><br>Sushi sounds kind of good.&nbsp; I'll have to get a package at the store today and make it last two meals (carbs).&nbsp; <br><br>Someone said PBJ... That would be fun to try on a high fiber, low cal, wheat wrap.&nbsp;&nbsp; I like the hummus suggestion, too.<br><br>Another thought would be some veggie cream cheese, along with veggies (and some turkey?) wrapped up and cut into pinwheels.&nbsp; The super high fiber tomato basil wraps (12g fiber) are quite soft and would probably work (and taste) great.<br><br>Thanks for the suggestions.&nbsp; They are really helpful.&nbsp; <br><br><br>Brad<br><br><br>

Make your own. Not difficult. That way you can season the rice to taste and add whatever you have handy. Cheaper too.

Prefer baba ganoush to humus. Just me.

<p style="margin: 0px;"><font size="3" face="Tahoma, Arial, Helvetica, sans-serif">Recently spent 3 days&nbsp; &amp; 2 nights on the road to MA and same on return to OH.&nbsp; Going on the cheap.&nbsp; Before leaving home I made fish cakes from a can of salmon...good finger food for meals on the go w/ a slice of cheese, bread optional.&nbsp; Kept small container of almonds &amp; dried cranberries &amp; an energy bar handy for snacking while driving.</font></p><p style="margin: 0px;"><font size="3" face="Tahoma"></font>&nbsp;</p><p style="margin: 0px;"><font size="3" face="Tahoma">For the return trip&nbsp;I ate&nbsp;energy bars, Ensure, vitamin water, almonds and dried cranberries.&nbsp; Found that a Burger King childs hamburger meal was enough food to keep my tummy happy. my only other purchase was a single serving container of broccoli salad.&nbsp; Total food expense under $6 for the return trip and the price of 2 coffees on the way out.</font></p><p style="margin: 0px;">&nbsp;</p><p style="margin: 0px;"><font size="3" face="Tahoma, Arial, Helvetica, sans-serif">&nbsp;I have also pre cooked lean ground beef patties at home before a trip, put into heavy freezer bag in the cooler.&nbsp; Pack your favorite burger toppings &amp; assemble a cold burger&nbsp;at meal stops.&nbsp; Tastes better than you might think.</font></p><p style="margin: 0px;"><font size="3" face="Tahoma"></font>&nbsp;</p>
 
Hi Butterfly, sounds like you had a great trip!! I'm sure you are looking forward to your summer trip as am I. My mom made canned salmon patties when I was a kid and would like to learn how. So would you walk me through it like I wasn't all that bright!? I'm kind of grossed out by the skin and bones, how do you get rid of them? Do you batter the patties before you fry them? Bob<br>
 
almost every weekend, I slow cook a Roast Beef 2--3 lb cut up in chunks,(4) beef boulion cubes,carotts,Tators,Mushroons, a touch of tenderizer, cook all friday.food for the weekend .maybe a salad w. grated cheese & olives thrown in.
coffee,& maybe some Ice cream for dessert.
Breakfast sometimes I do a nice Cheese Grits Casserole.
yum yum.
 
I get the small cans of salmon when they go on sale. The pink, red and others all taste different, i prefer the red over pink. I get a mixed salad at Supermarket and just eat the drained fish with a favorite salad dressing. Some crusty bread if hungry and always good red wine.
Stressed for time? I flay one can of sardines, with thin sliced onion on bread. i like the mustard ones. this is good with beer.
Tuna with avocado instead of mayo is surprisingly good, seeing that it is green fish.
 
Oddly enough, I live on the Oregon Coastline and know ALOT of commercial fishermen...but I've never tried those salmon or tuna cakes.

I'll hafta look into that!


me??? just about every morning it's a sliced banana over a bowl of shredded wheat. Lotsa good fibre!
 
My favorite on-the-road meals: Boiled egg with veggie beans on the side. Banana with a slice of bread covered in Peanut Butter. Cottage cheese with a side of pineapple or mandarin oranges. Hummus and pita chips. Apple and cheese. Bagged salad with low-fat dressing. Sometimes accompanied by Wal-Mart deli chicken wings.
 
I'm going with Elvis here, deep fried banana sanwiches--mmm

That should be 'deep fried banana sandwiches on whole wheat bread'! :D
