my cheapest and most tasty dish?
one-pot cooking on slow simmer... easily fits on my backpacking stove
a few cups of water with a small amount of rice, add any uncooked meat you might have now.
Add some chili flake, cumin and some tumeric to the pot
While that is cooking, chop up whatever veggies are left over and set aside.
Add a small amount of lentils and also barley to pot. let simmer some more.
throw a dollop of peanut butter into the pot. This will thicken the "soup"
I don't like my veggies over cooked, so I throw them in last.
I will also throw a few teaspoons of chia seeds in the pot to soak up some liquid if need be.
Any kind of protein can be added. a couple of eggs stirred into the mix is quite good, but so is any kind of meat
and yes, this is ultimate single life food found through desperation of empty cupboards......and I love it
