New here. I have a 98 chevy express. The largest type. What various ac setups are there? Ive researched and just wanted some live feedback. Im leaning towards rooftop and lower btu like the coleman mk 8. Is 11000 or 13.5 btu too much?

It depends on how well you plan to insulate, even parking in the shade makes a difference. The biggest concern is how you will power it, larger generators take up a lot of room and most places won't let you run them after regular hours, full hook up sites get expensive and solar systems need to be huge to run a small AC. Most here head to the cooler mountain areas for work for a full hook up sight.
 
I have a new 5000 btu unit to install in my Chevy van somehow....

The rooftop units are VERY noisy, I won't buy one.

I have used a Frigidaire 5k BTU for 2 summers and it runs fine with my Honda EU1000i generator/inverter.  Uses less than 500 watts, and even in an RV park for extended stays the electric bill is negligible.   Cools my step van very well on LOW.
