Also, I have a 20 amp ac LiFePo4 charger for my lifepo4 batts whenever I have access to 120v which isn’t often but sometimes…….

Like INTJohn said, LiFePO4 is the defacto chemistry for the batteries that we use.

Your math regarding the microwave looks sound. Batteries and solar panels to supply what you use, with a buffer for cloudy days, etc. That's about it.

I like to keep things simple, and have done fine for many years without a refrigerator (let alone a freezer), a microwave, heat (or AC), internet, hot water, etc. I buy food that doesn't need refrigeration (for a week at least), cook on a little propane stove, use a sun shower, move with the seasons, etc. I do have a laptop that I use for watching movies and playing games, and that is most of my electric consumption. I have a 12v-19v boost converter for the computer, so I don't waste energy on a 12V-120VAC-19V contraption. And I'll get on the internet when I go to town, if I can't get it via cell where I'm camping... which is usually the case.

Some non-refrigerated foods are nuts, tuna packs, beef jerky, eggs, fruit packs, raisins, cranberries, carrots, onions, garlic, bananas, apples, honey, pnut butter... and anything in a can.

Without refrigeration it's hard to keep your beer cold... unless you drink it in the morning (which is just wrong), or you are parked next to a snow-melt mountain stream, which is rare. So I drink whiskey... a near daily pre-dinner 4oz ration mixed with lime juice and honey, with a 1hr meditation.... and once a week I'll add a 10mg weed gummy (and a 5hr meditation) which is enough to induce a psychedelic experience. I'm sensitive to that stuff...
