I'm getting to the point to where I'm almost afraid to post something for fear it will be taken the wrong way. But here goes. Please remove it if it is going to be a problem.
While reading and checking out links on a skoolie conversion FB page, I came across this. It is a method of how someone built a convertible sofa bed in their van/class B. It looks pretty easy. I think it is doable even if you are moderately handy. They are in the UK so prices are in pounds and a lot of the measurements are metric.

This build blog has some very good info that you may be able to modify to suit your needs. So you may want to check out some of the various things they have done.
A metric conversion chart I use:

The table on the site that you can either print out or save to your computer for those times when you can't be online or simply don't want to be online. You can display the table in fractions or decimals. Decimals are better if you are using a calculator to help lay out your floor plan.
