I made this last night and it was fabulous!&nbsp; Though I am an vegetarian, I do occasionally eat free swimming fish.&nbsp; The fish could be left out and this would still be good.&nbsp; Quinoa does not affect your glycemic index like rice does because it is a seed.&nbsp; This is a really healthy dish.<br><br>Chop 1/4 of a good sized onion and 3 cloves of garlic.&nbsp; Saute onion and garlic in olive oil while peeling and dicing 2 carrots.&nbsp; Add to skillet and saute.&nbsp; Cube fish into 1/2 inch pieces and saute until flesh is no longer translucent.&nbsp; Add 1 1/2 cups vegetable broth and salt to taste.&nbsp; Bring to a boil.&nbsp; Add 1 cup of rinsed quinoa. Bring back to a boil.&nbsp; Turn down on low or turn it off and then turn the heat back on in about 10 minutes to keep it cooking(repeat if necessary).&nbsp; Cook until liquid is absorbed.
 
How long do you rinse it for? I have seen it saying minimum 3 minutes, that is a lot of water to use out of a vehicle. So unless I am near a water fountain, how do you do it?
 
I just cover it by about a 1/2 inch with water and stir it and pour off the husks that float to the top and then repeat.&nbsp; I used maybe 3 or 4 cups of water.
