Slow Cooker Not for Weight Watchers Potato Soup

If there is a decadent recipe for potato soup, this is it.  I think reading the recipe will make you gain 10 pounds but OMG its delicious. 
6 large baking potatoes - cut in chunks (I just scrub them and don't peel them but if potato skins bother you, peel them)
1 large onion, diced
1 jug of chicken broth
4 cloves of garlic - I just peel them and toss them into the pot
1/4 cup butter
Cook on high for 4 hours or low for 8
Mash up the potatoes.  
Add 
8 oz package off Sharp Cheddar Cheese
1 cup cream or half and half
Salt and Pepper
Heat to warm
Serve with sour cream, more cheese, bacon bits, chives or green onion tips

Vegetarians can switch the broth to Veggie.

Oh Dear that sounds wonderful and wouldn’t want to share any of it.

Bet our instant, short order, one person, low energy cooks will come up with some interesting modifications.

Sounds like part of “the day after Thanksgiving re-feast”

And don’t forget Canadian Thanksgiving is Monday October 14 this year. Celebrate with your snow bound or and snowbird friends before the flight south.
 
I'd add some thyme or other herbs, otherwise sounds great! Herbs are so healthy and lift things to the next level pretty easily.

Filling, inexpensive and nutritious.

You could keep the artery clogging quality down by adding cheese and sour cream sparingly to individual portions.

Maybe add some chopped bacon or ham.
