Larry's Spring Chicken Inn, in Morgan, UT, has broasted chicken that is worth the side trip up I-84 into Weber Canyon from Salt Lake. And Weber Canyon itself is gorgeous! Enjoy your trip, sounds like a grand adventure.

Is it possible to camp/park overnight at the North Rim?

Within the National Park you can only camp at the North Rim campground which is reservation only and pretty solidly booked for the season. Overnight parking/camping in parking areas isn't permitted.

About 18 miles north of the North Rim on highway 67 is DeMotte campground in the Kaibab National Forest with about 40 sites, half reservation and half first-come-first-serve. If you get to DeMotte before noon you have a pretty fair chance of getting a site.

About 1/2 mile south of DeMotte campground, unpaved forest roads head east and west from highway 67. Either one of those roads will lead to more roads and an abundance of dispersed camping sites. The road to the east is FR-611, with dispersed sites along the way, ending about 6 or 7 miles out with a series of dispersed campsites right on the edge of what people call the east rim, with spectacular views to the east. Be aware that those dispersed camping areas are very popular and by late in the day you might be hunting for a site.
