Pancake mix review!

I love pancakes, well I like french toast better but pancakes are easier to whip up and have what ya need usually mix and water, syrup and if your lucky maybe butter. last week I purchased Bisquicks pancake mix and hands down it is the best so far as , easy to find on shelves, taste and mixing.... I love this mix. Now I usually use evaporated milk in mix, I like the flavor of it, and sometimes I add a pinch of vanilla.... or another extract I may have just to change it up a bit but this mix is just great! Just wanted to share!
 
Blue cornmeal pancakes with honey and butter .... the best I've ever had!<br /><br />

<br /><br />I like cornbread and corn muffins but , in general cornmeal is just to gritty for pancakes, for me anyway, unless I am missing something, maybe ground down more?
 
Yeah, blue corn meal is quite a bit different than regular corn meal.&lt;br /&gt;&lt;br /&gt;

<br /><br />Yes it is, at least it is with the arrowhead brand that I've used. I'm sure they have coarse ground versions of it, but the bags I've bought were pretty fine for pancakes or baking in general.&nbsp;<br /><br />I've been fortunate enough to find it at the local markets, but I'm living in the southwest where it's been fairly common to find. It was harder to come by when I used to live in Minnesota.<br /><br />
 
Ok I have never seen it though I have not looked for it, I'm game to try anything, any reason why you like this type of flour?
 
Really late to this but if anyone ever finds themselves in the Truth or Consequences, NM area be sure to ask around to see if the Cuchillo Cafe in Cuchillo is currently open...if so it would be open weekends only.<br /><br />Feel free to tell Tony and Melissa that SidecarBrian sent you and get anything that involves corn tortillas...my favorite thing being the huevos rancheros rojo....because they are a long, long time family BLUE corn recipe and Tony whose family has run that cafe for generations follows the family traditions....a very sweet couple who will actually give you a lot of grief...all in fun of course, especially if you mention me....<br /><br />If I am around I'll meet you there....<br />Buen apetito,<br />Bri
 
I have to go grocery shopping and am going to go to a place where you can find unusual food (for this area), I will find me some blue corn meal! and there was something else somebody posted I wanted to have a go at... hope I remember what it was before I go!...<br /><br />I hate venturing about because i often spend money I shouldn't, but I am almost down to a bare bones of my food supply.
 
In Ny lots of mexican grocery stores I found it at a place called Johns Farms, haven't used any yet but i took it out of the box and put in in a thicker zip bag for better storage.<br /><br />
 
Best Pancake mix I have found is the Hungry Jack Buttermilk Complete.&nbsp; Just add water, mix, and cook.
