I know a lot of you dry camp, but for those of you that have hook ups....here is a great way to do eggs.&nbsp; <br><br>My sink is about the size of a postage stamp, so scrubbing eggs out of the bottom of a skillet is difficult and frustrating.&nbsp; So I have been eating breakfast out.&nbsp; Way too expensive and usually the food is not that great.&nbsp; So I started looking for an alternative way to cook eggs.&nbsp; I ran across a recipe to cook eggs in the microwave.&nbsp; I thought, no way is this going to be good, but I was desperate so I tried it.&nbsp; Possibly the best eggs I've ever had!&nbsp; So I was able to make breakfast in nothing flat this morning by making toast and microwave eggs.&nbsp; No more skipping breakfast! <br><br>Take a microwave safe container, I used a glass measuring cup, place about a generous teaspoon of water in and 2 eggs.&nbsp; Add salt and pepper(if desired) and mix the eggs thoroughly.&nbsp; Put in the microwave for 40 seconds.&nbsp; Stir.&nbsp; Microwave for another 40 seconds and stir again.&nbsp; They're done!&nbsp; They are fluffy and steaming hot and not at all rubbery like I thought would happen.&nbsp; Very little to clean up too.
 
im fortunate to have power from my host so i microwave often.<br><br>i have a few of those special microwave egg bowls and they work well.<br><br>ive even used a paper bowl.<br><br>my trick is spray some pam. or rub some butter. just a little.<br><br>i also use liquid eggs. works for me.&nbsp; a quart goes a long long way.<br><br>heres a recipe...<br><br>small dot of pam or a little butter rubbed on bowl.<br><br>throw in chopped onions and peppers and nuke for 1 minute. (or mushrooms or whatever).<br><br>fill bowl half way with liquid egg (i use eggwhites). 4-6 eggs maybe?&nbsp; COVER and nuke for 1-2 mins (i have 700 watt micro so takes longer). cover is important as steam helps.<br><br>throw cheese of choice on top of egg and nuke for 30sec to 1 min. COVER again.<br><br>remove and garnish with back pepper and ketchup or hot sauce.<br><br>eggs come out perfect. just need to fiddle with the cooking time.<br><br>great little breakfast bowl.<br><br>here in new jersey we love taylor ham (pork roll)....ive on occasion topped the onions and peppers with a slice or two of taylor ham and cooked it, then added the egg and proceeded with the rest.<br><br>mmmm.<br><br>

it doesn't have to be that elaborate. Paper bowl, wipe with olive oil, scramble one egg, put in bowl, microwave 1 minute, put egg on bread, apply catchup, eat.<br>Get fancy, put three rashers of bacon between paper towel microwave 1 or 2 minutes as needed, then make egg as above. combine with cheese on bread.<br>I'm usually done eating before the coffee is finished.
 
I did tons of eggs in the microwaves at work.&nbsp; Couple eggs, a splash of milk, a little Old Bay, wisk and wham eggs in a minute.&nbsp; Today, I use only cast iron for my cooking and like just fine.&nbsp; I have even during the summer done them in a preheated cast iron pan in the solar cooker in 7 minutes flat.&nbsp; lol
 
Tx, I thought all a microwave was good for was reheats, popcorn eggs and bacon.&nbsp; lol.&nbsp; <img class="emoticon bbc_img" src="/images/boards/smilies/biggrin.gif">
 
I wanted to kick this thread back up. It is not eggs, but the steam in bag frozen vegetables are great. The frozen brown rice is also good stuff.&nbsp; I use the plain vegs not the ones with sauces.
 
zil i agree...i get them all the time, sometimes even the full pasta meals...not always economical but great to have for a quick meal...i prefer them over canned.<br><br>
 
I tried one of those, Bertolli pasta and chicken something. It was good. I ended up eating the whole package. Two servings. Why can't I lose more weight? My plain microwave eggs were good this am. I was out of oatmeal.
 
yeah they list it as two servings but not enough for one in my opinion unless you have a salad and some other veggies with it...then maybe.<br><br>i grew up italian and i can make that stuff myself...most people can really its not all that hard...but its nice to just chuck something in the micro occasionally.<br><br>not sure if i mentioned previously but ive been using liquid eggs...egg white version...rather than actual eggs...the quality is pretty good and the convenience is outta sight...not sure if its for everyone though as ive no idea if the eggs are organic or what have you. i dont think ive seen an organic liquid version. maybe trader joes if i had to guess.<br><br>either way they cook up real nice either in pan or micro. tastes great.
 
@rj...<br><br>my set up isnt quite ready for pan cooking yet but i look forward to it. it takes alot to incorporate a micro into a build and if i were on battery 95% rather than a/c 95%, it would push me to the pan quicker for sure. im sure my setup could handle the micro that i have and how often i use it but i miss pans.<br><br>having said that, i havent had many bad meals from the micro...but it took a bit to adjust the methods.<br><br>when i finally plunk down on my homestead i cant wait to collect all the cool cast iron pans and cooking tools...it seems that they are really sought after by many. i love the idea that they can go into fire, oven or range top etc too.&nbsp; ill have a wood burning stove and those pans will be a perfect match for that.
