60-62 mph is the magic number for me as well.

1990 Grumman Olson 16' step van, 7' ceiling, 144K with Cummins 4BT motor.   14 mpg city, 17 mgp Highway at 55 mph. (governor equipped so 55 mph is max)

The negative:  I have to wear earplugs on the highway the damn thing is so loud.
 
My 1993 Ford Aerostar cargo van with the 3.0 vulcan motor got 24 mpg on the highway when it had 360K miles on the original engine.

Often misunderstood, the aerostar was a great van!
 
2002 Chevy Express 2500 with a motorcycle on the rear hitch. 159,000 miles at about 14mpg.
 
'96 B-2500 5.9L High top (new to me) with 44,000 miles. 4 day test run put on 702 miles, 16.2 mpg. Happy with this as had to endure about half the trip pushing strong headwinds.

12,000 miles
~11mpg city
~16mpg highway.
I have a light foot.
Above is with 2 solar panels and Fantastic vent fan and cover on top. Also with a solar panel on hinges hanging on the driver side.
 
I had 2 1/4 million on my semi when I sold it. I put a million and a half on it myself. 1 engine rebuild and I was getting about 12 mpg with the new ULSD but the old #2 diesel I was getting about 14. The new formula diesel was more expensive and lower cetane number. The biodiesel blend wasn't much better. Those 60 series Detroits were real workhorses.
 
Dodge Ram 2500 cummins diesel 16-18 mpg its got 110k on the clock and a Six-Pac 96 on the back
 
2002 Sprinter standard roof
140,000 miles
22 mpg average (mostly city, since we are part-timers at the moment)
 
2006 Sprinter High Roof 140wb self  built conversion 110k
23mpg doing 70 on highway   26 if I stay under 60 on the back roads

I'm guessing 10-12 mpg
 
2002 Class C 23' motorhome, 60,000 miles, V-10. Today got 14 mpg on the flat in Texas doing 55.

2000 GMC Savana G3500 w/6.5L turbo diesel.  About 228K miles.

I get 9-11 around town and 14-16mpg on the highway at 60-65mph. 

Although I averaged just over 17mpg for one tank during my trek north from Florida and had been driving at 70mph.  Yes, I was surprised.
 
1984 toyota truck with a chinook pup on the back, 200k miles and get 20mpg consistently commuting.
 
05 Express AWD. 220k on the clock. 5.3l. Conversion low top. Between 15 and 16 consistently.

My Peterbilt 379 Motorhome has 930,000 miles on it. Original Cat C-15 engine; never had the head off. Second Eaton-Fuller 18 speed tranny. Mileage runs 9-12 mpg depending on a whole bunch of different variables.
 
2015 Chevy Express 2500 Std. Wheel Base, 30K miles, 14-15MPG per trip computer readout. Doesn't seem to change that much if I'm driving 70 on the interstate or slogging through bumper to bumper commuter traffic in Pittsburgh.

It has the 4.2L gas engine.

About 15.6mpg on highway with a moderate load (500 lbs?) doing 65-75.
Loaded with a weekend of camping stuff, plus pulling a 500lb trailer holding a 750lb bike, about 13.7 mpg.
Stop and go it drops to around 10-11 mpg.

With the 4.2L the key to MPG is speed and overdrive.
You set the cruise at 70-ish and then use the overdrive button.
Turn off OD up shallow grades.
Steeper grades you turn off OD and stomp the pedal.

Or don't use OD button and let speed drop down if MPG  is most important to you and there isn't a lot of traffic tailgating you.
 
I drive a 1986 Chevy g20 van with a 24" hi-top. It has a 305 v8 with a 4bbl quadrajet and 3 speed auto trans. I try to keep it around 60mph and average around 15.25 mpg. In the mtns it drops well into the 14's but is in the mid 16's in the desert or prairie. Did a 150 mile stretch on I15 at 75 mph and the mileage dropped to 12.5. It pays to drive like an grampa but then I am. I try not to drive freeways because the semi's passing make it a real handful to drive. It's only got 110,000 miles and I'm anul about maintenance.
