I am a fan of Goat Cheese and also like to make my own pico de gallo.  This is one of my favorite meals.....Pinto Beans with pico de gallo and Goat cheese.  In the Southwest it is easy to find local goat cheese...especially in New Mexico...

I remember driving around the south side of Nashville there were Mexican food carts everywhere, you could find them with your eyes closed just by the smell of the goat cheese !

todays lunch was a fantastic yogurt with roasted pecans ,raw honey n a dash of vanilla. simple but tasty

I think the solar "quiche" took about 45 minutes on a sunny 85 degree mid day.
