True - I was assuming the desire to have internet TV and/or streaming in addition to video conferencing.  But you can always lower your limits (and lower your costs...)
 
DannyE. - hello again Danny - I have no answers for you but I do want to do what you asked. I don’t think anyone has done this yet but “you are nuts”you did ask us to call you nuts right OK just filling in the blanks. By the way I’m nuts too but hey what can we do about it?

My solution to video is to find a WiFi connection (at an RV park, a library, my home base etc.) and fill my iPad with videos. Amazon, Netflix, VRV, and YouTube all allow offline viewing on iOS. I also have an HDMI dongle for if I want to watch my downloaded videos on a larger screen.
 
Another advantage of having an RV is during times you need to recharge batteries, dump and fill tanks or insure internet you can rent a space in an RV park.

Cricket is owned by ATT, Visible is owned by Verizon, Sprint is no longer what it was but they had owned resellers (Virgin Mobile was and maybe Boost) & I've no idea what T-Mobile owns in the way of resellers.
