I bought a ceramic pan and loved it... for about two weeks.<br><br><br>The first day I tried to emulate a commercial and swirled my two eggs in the pan. They flew right out onto the floor! It was cool how they didn't stick to the ceramic! But within a month or so, stuff started sticking to the pan. Now, the results are horrible. No matter how little heat, or even with lots of oil in the pan, stuff is sticking and burning. You have to soak the pan to get it all out. The "non stick" seems to do quite the reverse. I am going to remove the handle and use the old ceramic skillet for a catfood dish.<br><br><br>On the other hand, I'm using a cheap (teflon?) pan that came second hand from Goodwill. It's lasted for a year and is just as non-stick as ever though I use a dab of garlic flavored olive oil with the eggs and hashbrowns. When done cooking in the wild, I wipe it out with a paper towel thoroughly and then coat the whole cooking surface with antibacterial dishwashing soap... sometimes not rinsing it until the next time it's called into service. I love it.. and want to buy more of them before they become dinosaurs.<br><br><br>What are everyone else's thoughts? Do you prefer the old non-stick or the new ceramic? I know they are going to quit making the Teflon pans and the non-stick stuff will kill me and all that, but... all I want to know is which do you prefer to cook with?
