I would recommend a fuse block for your loads. It's an easy way to have a fuse on each individual device and makes connections easier rather than adding a bunch to the battery.
There are a couple ways to do it, but I would connect one positive and one negative from your load terminals on you...

If I get in serious accident in my van, I'm going to have a literal van-load of construction materials and supplies flying at me. The batteries on the floor behind my driver's seat are probably less of a concern than the rest. YMMV.
In my E350 I put my two SLAs behind the driver seat to keep the wire to the starter battery as short as possible. However, I wish I had mustered up the ingenuity to mount a battery box on the frame under the cab. I may circle back to that one day.
When people do this, do you use plain white vinegar? And what is the vinegar/water ratio? Do you let it sit? Wipe immediately? Do your dishes smell like vinegar after?

Agreed. I got an E350 with the 5.4L for that exact reason. It is one of their most produced engines (implying it was quite successful), and any shop in the middle of nowhere has worked on one and shouldn't have any problems sourcing parts.
