I found a YouTube vid of a couple who use their van to camp in Florida when they go on kayak fishing trips. They shower and get fresh water at facilities right on the beach and at night sleep in their van at Walmart. I know that some Walmarts don't allow overnight camping, that's not the reason I'm posting this. Their setup is really simple but pretty comfortable looking. Seems they have plenty of room to stretch out. My only concern if it was me would be I'd need a more solid mattress than an air mattress. Maybe it'll help someone starting out with a similar setup.

I did exactly the same thing as they are.
I traveled most of the country in an Astro van with my girlfriend and two dogs.
We used a Colman two burner propane stove and a Coleman queen sized inflatable mattress and some blankets. We stored everything into three plastic totes.
Never had an issue sleeping. We did eventually get a cheaper 8x8 tent with an additional 5x5 attachable alcove to put our gear in. It was nice when we wanted to stay for a while and keep in the shade.
And finally we added two folding camp chairs. All of this fit behind the front seats and our dogs could move around with plenty of room. Even three weeks in Alaska was quite comfortable.
