I am getting ready to install a cantilever mount for a 19" LCD TV. I'm not sure what I should be looking for when I go to screw it into the wall. Since I have a class B it's already insulated and such - do I just look for a stud like I would in a house?

This is the mount I bought

Mounting like this is completely different than in say a home... You have vibration and movement working against you... best bet is to find and span between 2 ribs and secure say two 2x4's firmly into the ribs... Then using the 2x4's mount securely to them with bolts... A 19" will be heavy so your mounts have to be secured to counter the weight... It is not impossible, just remember to over engineer the mounts so as to not lose the TV when driving... Good luck
