First one of these I've seen in my area.   I can see lots of possibilities with one of these. 

Plenty of room to live in, could have AC/Heat installed in numerous ways,  carry water tanks
under the floor,  batteries/Solar,  etc and still be a workable size in the inner city.   For those
wanting an all in one vehicle to live in.

After 5 to 8 years on a route it would likely be written off and sold affordably and sill with
reasonable mileage on it.

This was sitting on a Sam's Club parking lot.

I like that too and all the room you could ask for. If/when my thoughts change from wanting to get farther back off the beaten path I would be looking into something similar.
 
Check its carrying capacity, as tater chips are light. Now if it was a water, soda or beer truck....

I think it's interesting how they "stole" the passenger seat area with the forward placed side door. I'd be curious to look at the inside layout...
 
As an added bonus, your vehicle/home would always smell of potato chips.
(Mmmmm potato chips *drool*)
 
So, it's a Class C RV without the RV stuff, which you would then build out your own way, duplicating some of the RV stuff that isn't there.
