I was looking for ideas to finish the inside of my van, the walls, floor, and mainly the hightop. 
I was thinking of just running some tounge and groove the length but then that's a lot of weight. Maybe use Pergo or something like that.
Cabinet finish wood or paint
Flooring carpet or Pergo
Curtains? Yes or no
Paint color accents?
Do you have a theme?

I'm kind of over the wooden cabin look. I've been looking into alternative walls and flooring. No VOC vinyls or some other wallboard materials - I've been following Greg Vigroe on YouTube - He has been doing a DIY Sprinter Van build that is very high quality but very different than many layouts I've seen.
 
I covered the insulated walls with sheets of FRP -- fiber reinforced polyester. It's the white pebbly textured stuff you often see in public bathrooms. Except I used it back side out, which is smooth. It's tough, flexible and water proof. I prefer the look of paint. To me, wood grain is an accent, not an overall thing.

I decorated the sliding door with Mexican Lotería posters.

I decorate the opposite wall with stickers of the places I've been. I ordered about half of them from RedBubble.com which is easier than trying to track them down at the actual locations.

Well the first thing I have for you is, Hi, welcome to the group. And second is carpet is usually one item left out. I mean outside. I have an area rug that I put down so I can kick my shoes off to help keep the dirt out. But inside I have a sealed pergo floor. It keeps spills from getting to the insulation underneath and is easy to clean.
Carpet will hold dirt moisture and spills.
I originally had toungue and Grove on my high top but put 1/4" luan in its place.
I probably shaved 60-80lbs I may have lost a very little "R" value but gained a 1/2" of height and saved on weight. Interior's are unique. Its your space, so let your personality run with it. I have a mixture of dark and light colors to help with lighting and adding contrast also. I also used magnet's taped to my led lights to find locations that they gave me good lighting and the least amount of shadows. Then when I put the luan up I mounted them.
I'm glad I switched to led not only because of the low amp draw but because I had symmetrical lighting that didn't light the work spaces well and I gained the benefits I mentioned earlier. That's all I have as far as the build finish. But I hope it helps you avoid a few problems I installed and had to change.
Not like it's going to stay like this forever, we do tend to look at our space and think "I wonder, if I were to..." And the saga continues. Good luck with your build!

We're thinking about using bamboo paneling on the walls and ceiling: https://www.foreverbamboo.com/bamboo-paneling.html It's lighter weight than wood paneling, thin and flexible. For the floor, for now we will go with the padded black rubber OEM mat that came with the van when we bought it, but if we were to use something else, we'd probably go with Marmoleum, because it it nontoxic, durable and impervious to water, so easy to wash.
 
I have tongue and groove cedar pine in my build. It is NOT heavy! It can be found at Home Depot, is a 1/4" thick and 8' lengths. Easy to work with and looks and smells great.
 
I'm a firm believer in the, Make it yours van build. Build it around "you" it's your personal space. And not a whole lot by the way. So everything done has an impact on the van in a whole. My only advice is make maximum use of storage. You want to have things put away during travel so make sure you have a place to stow them.
Also because it is a small area having things out creates clutter and confusion quickly. Other than that, Run with it! Have fun and be creative. Best of luck with your build.
