With regards to those that prefer to work a bit then travel a bit, then work a bit etc one open is day labor.  Most major cities will have day labor places (some common ones are StandBy, ManPower and Labor Ready).  Probably the easiest way to find one is to either look in a phone book or, believe it or not, stop by one or two homeless shelters.  

   Homeless people can be a treasure trove of local information...from what bus to take to get where to where you can go for a free hot meal to which local shelter is worth staying at (incidentally, homeless shelters can often be a source of free showers).

   These are jobs where you work daily and are paid daily.  A good choice, in my opinion, for those that want to earn some money, but do not want to be tied down to a traditional job and aren't working the campground/beet harvest/amazon circuit and aren't into the poker dealer gig.
 
When I lived in Los Angeles, the local Home Depot always had a group of people wanting day labor. IIRC the city put some regulations on it and the store had to build some support structure.
 
Over time, I've seen a few other forum members talk about picking up construction jobs as they travel, and out of general curiosity I had wondered how someone does that. Now I know of one way.
