How many of you guys eat grain free? Who has problems with grains? I mean terrible heart burn that make you want to scream,IBS and extreme mood swings(last one through me for a loop!)rashes (or really allergies)
I was thinking about this because being in the van means I will be cooking less and I cook ALL my breads and stuff cause I can't eat the breads bought in the store.
here is an example. oopsie rolls This is just a basic recipe. I add all kinds of spices to it like onion and garlic ,dry mustard etc(just not all at the same time)
How do you handle it on the road? Its making me just a little worried. This is important for me to stay healthy and Im sure likewise for you guys. So can we do a little sharing here?

Not me, I am lucky enough to not have any food allergies...

I am not grain free. But, I have cut back a lot. Have you tried using oat or almond flours in lieu of flour? It is wonderful and have done so successfully in many recipes. I especially like the almond flour but both are really good. Thanks for your recipe, it sounds yummy! Have you ever tried spelt breads? I have not but would like to soon.

I have been told to go grain free because of my food allergies. Sometimes I am successful at it..like tonight I made pancakes by using eggs, cream cheese, baking powder, vanilla, cinnamon, and Stevia in the blender then frying them up like pancakes. The past month I've been eating gluten free breads and feel like crapt so I'll have to go back to grain free. Its difficult because the allergy test also showed I'm sensitive to almonds which I was using as my flour...that threw me for a loop. I'm also allergic to yeast..ugh, and milk, so the only milk products I use is occassional cheeses. Otherwise I use Coconut milk for everything else. If you search "eat once a day", there are quite a few good grain free recipies.
I tried making oopsie rolls but they didn't turn out well and didn't like how they tasted. That was when I first went gluten free which was very difficult for me. So...I'm not totally grain free but getting closer. Its a process for me, not something cut and dry.
Rae

Only if someone else buys it for me

Yesican that sucks you can't have the almond flour as you know most of the breads and crackers they are made from that. Have you tried sunflower flour? Or even walnut flour? There is more than almond if you want to bake something. How about coconut flour? Thats one I can have. I agree the breads that come from the store are crap! The ingredient list makes me see double LOL OMG potato starch ,rice starch...and the list go on. Good for you in taking it slow. Thats what I do. Good luck there!

Steve I knew you would say that!! Anything for free?

I am. I follow the perfect health diet: http://perfecthealthdiet.com/ which is a version of Paleo. My health was at one of it all time lows when I decided to eat "healthy" by following the USDA recommendations of lots of whole grains. Sick all the time and stomach grew to twice it size.

I am not sure what the rest of your diet looks like but assuming you have a stove-top/propane burner and skillets or pans I don't see it being a problem. Grains are in fact what people need to use ovens for, everything else I eat I don't have any problem cooking on a pan.

My son has gluten issues so much of the house is grain-gluten free.

So I am glad to see I am not the only one here! Although it would be better if we ALL didnt have this issue. I am kind of new this. Not knowing I had food issues until a few months ago. It good I found out but was just worried about not being able to take care of the cooking things that go along with it.

I have found that everyone I know who has tried going wheat-free has improved. My friends lost weight. My mother's blood pressure dropped to normal range for the first time in her life. My father's blood sugar went down.

I believe the issue is compounded by the fact that all wheat here in America is Genetically Modified to grow more and serve as its own pesticide...and we eat it.
