Totally doable, just use backpacking gear and bring a stove that uses canister fuel that you can buy when you arrive. There's even a small 1 burner Coleman that uses the little green bottles that are available everywhere. I think it costs less than $20. My wife and I actually flew to Alaska and rented an SUV and put together our own tour. We ended up staying in cabins and B&Bs as it was for our 25th anniversary, but it would have been real easy to fold down the rear seat and sleep in it. For a cooler we just bought one of the cheap throw away foam ones at the first grocery we went to, then bought some frozen stuff like juice etc, to keep the fresh stuff cool. When the frozen stuff thawed we consumed it and bought more. Since we were traveling quite a bit we only would buy food for a couple days at a time, but it saved us a ton of money not eating out all the time.

And I guess I never read the fine print on the rental agreements. I probably shouldn't have visited Dragonfly's camp down 5 miles of muddy road with a 28' moving truck last summer eh? they didn't even complain about the muddy wheels when I returned it.

My Dirtbag setup is similar, using backpacking stuff mostly, plus of course the platform / mattress, tossed in the back of the Ranger
