I am retiring at age 57 with savings and no other real income. I have a descent nest-egg, but certainly not rich. Selling everything and going all-in. Bought a '99 ford box van - a smallish box van - like the smallest one they make. The box is 12' x6' and 6'h. I can stand up in it and it has an onboard generator and rooftop air conditioner. This was an old sewer inspection vehicle. It had a camera on a cable with compressed air to clear blockages (the joke is the truck has seen its share of shit) Its an E350 superduty. I am now gutting it and checking for leaks. Next will come insulating and wiring. I need to order all the stuff for solar. Thinking of doing a mini-fridge instead of the chest-style fridges we see in the videos. Because I want a freezer too _ I love to cook so I will have more kitchen than most builds we see in vans.
I bought this one because it has lots of clearance and had that generator. I think it will easily get back on the forest roads and wherever it needs.

I'm sure you will do well with your rig.   You may travel and find better work along the way if you have some
skills you can use on the short term.  ((I'm thinking cooking related jobs) 

Lemann's Hardware here in Ohio furnishes the Amish with non electrical appliances.  Refrigerators, freezers, etc and they ship all over the world.

You may find refrigeration and freezer equipment there that would suit your needs.  I'm sure you'll have all the room you can use in that if it is just one person.  I could imagine having a small or portable kitchen to cook outside on for quick simple meals in the outdoors.
