Couscous doesn't need cooking! (plus recipe!)

<p>Did you know that Couscous needs no cooking whatsoever if you get the 'quick cook' type?&nbsp; not even warm water!</p><p>I soaked my couscous in cold water for about an hour, &amp; it was perfectly absorbed.&nbsp; I'm pretty sure it would take less time, but I started it &amp; wandered away from the van&nbsp; :D<br><br><br>I had a bunch of leftovers that I threw together to make a Greek Chicken Couscous Salad<br>Feeds 2 big eaters<br>1 cup couscous<br>1 cup water<br>1 chicken breast, cooked &amp; shredded(deli chicken works well)<br>1/2 cucumber, diced<br>1 tomato, diced<br>1/4 red onion, diced<br>1/2 cup feta cheese, crumbled<br>2 tsp oregano<br>3 tbs lemon juice<br>2 tbs olive oil<br>1 tbs balsamic vinegar<br><br>Toss everything together &amp; enjoy.&nbsp; Olives would have been nice on this, but we didn't have any on hand</p>
 
It was really good, &amp; could easily be used with any different type of cuisine (Mexican - cumin, black beans, tomatoes, onions, peppers, cilantro, corn.&nbsp; Mediterranean - cinnamon, cumin, coriander, chickpeas, carrots.&nbsp; Etc)
