Cornbread without an oven

The rest of the world probably already knows about this, but I just discovered hot water cornbread. You mix the ingredients with, duh, hot water, which partially cooks it as you mix. Then you form it into patties and fry them.

There are a bunch of different recipes — whether you use white or yellow cornmeal, cornmeal-to-flour ratios, sugar or no sugar, how much salt, whether you fry them dry or with some kind of butter/oil/grease. Everyone has their own "right" way. But if you've been missing cornbread because you don't have an oven (or dutch oven or whatever) here's a solution.

In the South they're called Johnny Cakes....

Not like REAL Cornbread but they'll "DO".....Don't Skimp on the BUTTER when you Fry them !!!

and consider adding Jalapenos to 'Taste'...……...YaHoooooo
 
Anyone care to share a recipe?

I've never made cornbread without an oven. Would love to have a good recipe to try. A hack of a store bought mix would be greatly appreciated.
 
A friend made them for me this winter. They were delish! And I don't like cornbread all that much

We were poor so johnny cakes, also known as hoe cakes and beans were staples in my house growing up. You can use any cornbread recipe. What I do now for quick and simple is add an egg and milk to a box of jiffy cornbread mix. I cut down on the amount of milk to keep it somewhat thick. Get a frying pan hot with veg oil or butter or bacon grease, spoon in and fry like pancakes. Let it get crisp on first side and flip to crisp on the other. You can eat these with butter, syrup, jelly, almost anything. I like to easy over fry an egg and put on a cake and use another like a piece of toast. Cook the same way and pair it up with pinto beans for a great supper. If you like spicy, chop or slice up jalapeno and stir into batter. Onions work well too. You can add vanilla, sugar, cinnamon to the batter if you want a a sweeter pancake for breakfast.

I love that website, and have made several of their recipes. :)
Most recipe sites are painful with very heavy ads, but King Arthur has, at most, one brief popup (zero if you practice safe surfing), then you can surf the site pain-free. :)
Their search function is pretty good, and it's rare that I can't find a baked goods recipe there.

white corn meal is best, faster cook time

add in a spoonful of flavored grease like bacon grease, chicken fried chicken grease for extra flavor in the cake.

just spoon and fry......simple really and delish as a 'pancake' or as a 'side bread' with collards etc

a finer bought grit texture matters also. kinda the smooth meal vs. the gritty chunkier textured meal.

southerners love their hoecakes :)

yea the 'in the oven' cornbread ain't all there is for using cornmeal.....frying up some hoecakes is the way to go over a fire or whatever. simple and easy

best is cut in half, spread on butter with home made strawberry jam....
Or cut in to bites and set on top of home made bean soup....
 
I bake up corn bread all the time using a Banks Fry Bake on a single burner butane stove. You can try using a skillet with a dome lid and a pie tin elevated with washers. Set the burner as low as possible and bake away.

 
I'm gonna see if I have any corn meal and make some for lunch tomorrow. Today's meal is already on the smoker. But now I'm craving cornbread. XD
