The green circle in the following image shows the shelf and area I'm referring to. If one has a formal name for this type of suspended drawer shelf, I'd appreciate it.

The most logical way of connecting that 'side/flanker' piece to the 'wooden ceiling' seems to be with corner brackets and screws. Any suggestion or videos that demonstrate constructing it, would be appreciated as well.

I would use a double wide corner brace, they are 1-1/2" wide instead of the skinny 3/4" wide angles. You might not be able to use all six of the holes but at least you will be able to use 2 of them into the structural rib on the roof van roof and 2 or or maybe 3 into the cabinet side. Belt and suspenders to have more than one fastener going into the ceiling rib and more than one going into the cabinet.  But I would also be putting in one at both ends as well as one in the center of the length. Roads can be rough out them when heading into campsites.

I design upper cabinets with an 2x2 along the upper front edge. That allows me to screw thru it right into the ribs on the ceiling wherever it crosses one of them. That eliminates the need for corner angle braces and results in a stronger and more secure cabinet construction.

The combination of mechanical fasteners with an adhesive is a plus with vibration.
