I made these today and they went over pretty well with Dad and three cats...

Here is what was used:

3 small turkey legs
3 stalks of celery split down the middle
seasoning salt

Cut a 3/4" or so slit in the meaty end of the turkey leg. Cut a pointy "spearhead" at one end of the celery pieces. Gently push the pointy end into the slit and thread the celery along the bone as far as you can go. I did it on two sides of the turkey leg. Sprinkle the leg with the seasoning salt.

If roasting uncovered, I would leave the skin on to lock in the moisture. If cooking in foil, you can get by removing the skin, seasoning, and then cover. I baked these in a 275 degree oven for 2 hours. The meat fell off the bone.

Dad's turkey leg used regular seasoning salt. Mine had jalapeno flavored seasoning salt. Both turned out very tasty.

I plan to wrap up a couple of pre-stuffed legs and throw them (along with a foil packet of veggies) in the Koolatron for the next camping trip... It would be a good thing to cook over coals and smokey applewood... all the while reading a good book and sipping a cold glass of wine.
