A couple of things that may be helpful:
1. There is a blog called Plein Air Journey. I believe he has a Class C rig and that there is a permanent menu item about how he organizes it to allow his work to dry, to keep the canvases nice, etc.
2. There is a thread about making money on the road and Off Grid has some interesting stuff he's posted. The one hot right now is that he gets jobs this time of year at Christmas tree lots. Evidently he gets $10 per tree sold but he makes hundreds on some days... he's mentioned something like $7,500 - $10,000 for the season. Of course, this might be in a larger city with booming sales, but the idea might be worth looking into.
