My cottage is full of packing boxes/rolls of tape/marking pens. But it is Xmas,
after all & wouldn't be the same without baking something delicious. Two weeks ago
I picked the last 200 ripe Meyer lemons off my tree---so yesterday I began making
old fashioned lemon meringue pies to drop off at the local food banks' Xmas dinner.
Today my one still-remaining visiting RV couple is helping me nicely toast the peaks
of the merange topping with a small propane torch! Just too many pies to get this
done in the oven. I've made a dozen or so.
The real challenge comes early tomorrow, when we must figure out HOW to transport
these beauties one hour over winding road to the Coast/Food Bank. Rob has an idea
to fabricate a sort of pie holder from big slabs of cardboard with dividers.
It remains to be seen!
Kitchen here pretty much already packed up, so looks like Lemon Meringue pie for
