The one hundred percent rain didn't arrive until early evening. So I figuered the best dinner for me today would be a salsa salad... Something with a little heat/spice in it. This was actually a new creation from lunch leftovers. Grilled a couple of asparagus in coconut oil and garlic. Heated up leftovers (taco inspired salad) and poured over kale. Covered for a couple of minutes so that the kale warmed up.

Anyone have a salsa salad recipe to share? I really enjoyed this, but would like to try something different next time.

I've never heard of a salsa salad, and from your picture and description, I still don't know what one is.

In a nutshell it's salad with a Tex-Mex feel with homemade salsa.

Don't go crazy with coconut oil. It's about 90% saturated fat. (Butter is about 60% and lard is about 40%)
