Switching over to a different van i decided to go back to buying food that doesnt require a fridge. atho having it was a nice convenience, im worried that ive become a little reliant on it, and using it means i need to plug in occasionally when there is no sun....just about every week here. Its not so bad, its cool enough now that if i keep drinks on the floor and covered theyll be cool anyway.

Im thinking id like to be more self sufficient even if there is no sun.

Potatoes, pb &j, fruit bars and fresh fruit. i have some canned chicken too but i want to avoid high sodium. need to figure out some more proteins low in salt.
 
Soaking and/or rinsing your canned foods will removea lot of the sodium.
 
well to lower the sodium buy fresh instead of processed. instead of the canned chicken get fresh chicken(but then you need refrigeration). instead of canned beans get dried beans long shelf life no refrigeration needed. even store bought eggs can last awhile without refrigeration. highdesertranger
 
Unsalted nuts and seeds are high in protein and low sodium. I've noticed it's also hard to avoid added sugar. They sometimes sneak it into dried fruits!
 
Beans and rice: the only complete protein mix better than meat. Best part: FRIDGELESS!
