Thinking Sprouts today got me thinking pickled eggs!  So good together.  Especially in summer.
Here's a great recipe for Mustard Pickled Eggs.

Pickled Eggs with Mustard
-from gazette.com
2 C white vinegar
2 Tblsp mild mustard-I used plain yellow prepared mustard
1/2 C water
1 C sugar
1 Tblsp salt
1 Tblsp celery seed
1 Tblsp mustard seed
6 whole cloves-the spice
1/8 tsp turmeric-optional-my addition to bump up the yellow color naturally
2 onions, sliced thin
12 hard boiled eggs, peeled

  1. Add everything except onions and eggs to sauce pan, bring to a boil, mix well (I used a whisk), reduce to simmer for 10 minutes.
  2. Remove from heat and cool.
  3. Layer onions and eggs in jar, cover with pickle brine. 
  4. Cover with lid, place in fridge, let marinate at least 24 hours.

Any tips on marinating time? Says 24 hrs, is that enough time? Can you reuse the marinade? How many times? Do they need refrig? I love eggs and especially boiled eggs, be nice if I could have pickled eggs. They go so VV nice with beer.

EDIT: I did not see the "place in fridge". I'm an idiot.

Minimum 24 hrs, but more time=more intense flavor.  I've got some pickled beets with eggs & onion that I put up over a month ago.  A proper marinade has lots of sugar & salt in it, both help preserve food.  So use a proven marinade recipe to get good flavor & preservation.  Garlic always helps too.

I reuse my marinade several times.  I use it all up for dressing, etc.  Then make a new batch.  I've been growing food/canning/pickling etc all my life, so I hesitate to advise novices.   Just make sure your jar is CLEAN.  I don't think old timers refrigerated pickled eggs, but kept them cool & dark in a root cellar.

Yes. the jar of pickled eggs on Moe's Tavern bar were there when he converted his Ice Cream Parlor 30 years before.
