Welcome livesimply5, we're glad you are here! Some thoughts:
1) The most important thing is to make a comfortable bed. One thing to try is laying down the front passenger seat and seeing if you can lay a piece of plywood from front to back over it as a bed.
2) To carry more stuff you might try a roof top carrier or adding a hitch and putting a hitch haul on it.
3) If you get a marine battery you can sit it in the floor area of the passenger seat and wire it to the starting battery so it is charged as you drive.
4) I highly recommend a Roadpro Oven, the kind that looks like a lunch box. You plug it into the cigarrette lighter plug and it does a great job of cooking meals as you drive.
