If an appliance is a 110v AC unit that has a brick that changes it to 12v DC, it's always running on 12v DC. The main issue being can it get the amps needed to function normally.
Buck and boost converters can handle most DC situations. And most are adjustable so you get the voltage you need. Just make sure that they can provide the amps needed at a specific voltage in DC.
