My wife and I are in the saving, and sell everything process. We are anxiously preparing for class c rv life. We bought a 1987 GMC RV. It was completely gutted and we are close to having the build done. Right now we are "weekend/part-timers". 
I'm a nurse and will start my first travel nuring job in California next month. This will get us one step closer to being on the road full time. 
We got interested in this lifestyle watching all of tiny house shows, that lead to me finding Bob on YouTube and we have become fascinated with the possibility of living FREE or with freedom for the first time ever. 
Any advice on pulling the trigger and get started would be appreciated.

I think you are doing all the "right things" to get yourselves started.   You have a way of working that is always going to be in demand.  You have your Rig nearly finished and ready to go, which is a major part of it all.  Now all you have to do is learn/read/become aware of a lot of the little details that will assure your comfort & convenience while out on the road. 

The week end camp outs and occasional Day Trips will be good practice for what you are learning here. 

As a worker in the Medical Industry,  you will be aware of how much medical services people use that is paid for
by "Insurance".   You may decide to work within the frame work of a few states which have decent insurance for their citizens so that you would have consistent employment if only by traveling through some of them so you could be in comfortable weather & temperatures year around.

Years ago my own Grand Mother had encouraged me to consider purchasing an old Class A to park in a Trailer Park (a nice one)  and take my econo car to work each day.  (towing it behind the RV when moving from job to job)    Thus if the job or work supply dried up,  I could hitch up and shove off to a new destination where the work outlook would be better.  It's still something I consider from time to time.   :p
