Welcome, and nice rig! Big advantage it being on a pickup chassis instead of a van chassis, it'll be much simpler to work on, and that also translates to lower repair bills when it has to be shopped
 
Have you looked to see if there is a fuel injection kit you could replace the carb with? Try somewhere like Summit Racing. Would run a lot smoother. Maybe upgrade to electronic ignition too.

Now these are some interesting ideas...I've noted them for when I talk to my mechanic...thanks!
 
There was a company that made basically a bolt on kit, I think it used a wide spectrum O2 sensor to tune it, not sure how much trouble the install was, but the guys at one of the hot rod rags did an install and liked it
