Already have an F250 and 27ft travel trailer.

It sounds like you already have a good outfit, just planning on utilizing it more. I think staying smaller (27') is a good idea rather than the big 38' 5ers. Run this outfit until you get tired of it, and by then, you will have figured out your dream rig.

I currently pull our 32' Heartland lakeside with a big diesel Excursion....although this is a comfortable rig, and a powerful tow unit, it's possibly bigger than I like, and doesn't handle as well as I would like on the highway.
