On the passenger side I know that the blower fan for the rear air is located there. The driver side appears to be just for OEM tool storage and probably the fuel filler.. I am certain the driver side can be removed with no I'll effects. The passenger side may be more complicated.

I my case, I'll be selling the third-row bench seat (I will never need to seat 7 people), folding the larger 2nd-row seat forward and keeping the jump seat in place as a nighttime chair. Then I will put rubber gym-mat material down on the flat portions and put a cot-sized foam mattress behind the driver's seat. Add some storage tubs, some rain guards/mosquito netting, and some privacy curtains (if I can hang them from the overhead hooks and handholds), and I'll be ready to make some road trips.

That's pretty much what I did.  Hit the road six days ago with my dog and it works just fine.  I also have a hitch carrier.

How did you end up handling the window-covering issue? I think grommeted curtains suspended (under tension) from carabiners on the hooks, handholds and rear windshield supports will work, but I haven't tried it yet....

So far I have been so far from my neighbors, and with tinted windows anyway it hasn't even an issue.   But I did make reflectix push in coverings and stored them under the bed for when needed.  I also have a curtain that goes across in back of the front seats.  Good luck, and happy travels!
 
Well, it looks like the sleeping space isn;t completely flat even after removing the 3rd-row bench seat,folding the 2nd row seats forward/down and placing a gym mat over the whole thing. There's still what feels like about a 1-inch height difference between my upper spine and lower spine (ouch!). I'll be adding a 4-inch foam mattress; will that even things out sufficiently, do you think? i hate the idea of having to add some kind of bed frame.... Maybe in the worst-case scenario, I could squeeze a very low cot in there and prop 2 of the legs up a tad. But that will put me almost nose-to-ceiling. A flat piece of plywood might also work, but it will add to my weight and reduce my already-bad MPG .
 
We stored jackets, blankets and even tarps under our mattress to even out the surface. Soft things you might not use at night while sleeping. Maybe a folding table 1" thick? Maybe a piece of carpet folded?
