I like the idea of having the kitchen separate from the sleeping too, so I cook outside mostly. I think a cargo trailer converted to galley & dining with the sleeper in the TV, with a single burner or a backpacking stove for morning coffee, would be nice. Hardly cheap RV living but the Aussie off road campers always get my attention.

We see em all the time over here especially up here in Queensland.  These Aussies like camping almost as much as us in Canada and the US.

Or and old boat trailer someone is selling cheap.  Shorten the tongue a little and take the slide rails off and you have a decent build platform.
 
Just a bit more effort gets you a minimal "hard tent", lots of home made tiny teardrops build over cheap 4x8 HF trailers.

Yeah, I have a 4x8 trailer now in the back yard I could use. Not a Harbor Freight one, far more heavy duty.
