Looking at a van in a couple of days and hoping to buy. I lived and traveled in a van many moons ago for only 6 months, but loved it. Then I had a partner. Now I will be going solo. I'm excited. My plan is to be fulltime in the next few months. Starting from my home state of WA and working south visiting family and friends. From there, who knows.

Hi, just saw your post on YouTube. Easier for me to answer any questions you might have here on this forum. Also a lot of other people here with more answers and ideas than I could give you :)
As to choosing between a self conversion or a class B there's no right answer. If you have three years you may want to do your own conversion to get your home just the way you like. Something else to consider is if you buy a class B you can always use it as your base for a conversion especially if you have the time.
You seem concerned with the quality of the interior fixtures. I can only speak about my Roadtrek because I've never had another Rv. I'm very happy with it and haven't had any problems in the two years I've been living in it. Hard for me to see how I could do a better job myself short of using exotic wood cabinetry or a marble counter top or something which doesn't interest me. I like having running hot and cold water and a flush toilet. Seems like a small thing and if I had to I would make do, but living in my van is pretty much just like living in the last apartment I had.
Good luck
