Yes- it's a van. Unless it's a cab-chassis (box truck, short bus, RV), an E350 is a van.

Couldn't you just use an Exterior Grade plywood?  Not nearly as expensive as Marine grade, and only a few dollars more than standard plywood (Don't use OSB).  If you're still wary about coating the plywood, someone suggested Killz It...  They have anti-mold primers and paints.  I would check...
