    Vertical solar panels

    I did a test yesterday with my 85 watt panel. With it pointed directly at the sun I got 3.6 amps. With it positioned vertical on the side of my coach I got 3.2 amps. Sky was crystal clear and no clouds. I'm located in central Florida.

    You are comparing apples to oranges. GoalZero is using Li-ion NMC (Lithium-Nickel-Manganese-Cobalt-Oxide) chemistry. The number of cycles for NMC is a lot less than LiFePo4 but there may be other advantages.

    The Rover 30 has a maximum input of 100 VDC. 5 panels in series would be 100 VDC. There most likely would be times where the voltage would go higher than 100 VDC so there would be a chance of frying the controller.

    It's unclear whether the OP will have a total of 3 panels or 5. A typical 100 watt panel will have a Voc of about 20 volts and 5 in series would be 100 volts. As mentioned, make sure your controller can handle this high of voltage.

    New batteries

    I have a Renogy 170ah lithium that I installed 2 years ago. The only thing I did was I upgraded my solar charge controller. I have had no problems charging directly from my alternator or from my stock converter.

    Wiring for boost/buck converter

    If your fridge is shutting down because of low voltage you may be doing some major harm to your batteries if you don't have a BMS (Battery Management System). If you do have a BMS your batteries are disconnecting, which is a good thing. You probably need more battery power.

    An LED is a rectifier (Light Emitting Diode) so if you hook it up backwards nothing will happen. Some LED bulbs have circuitry built in to handle a broad voltage range. These typically will function with either polarity.
